- Avocado - 1 large, ripe
- Corn tortillas - 4 small
- All-purpose flour - 50 grams
- Cornmeal - 50 grams
- Panko breadcrumbs - 50 grams
- Egg - 1 large
- Milk - 30 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Vegetable oil - for frying
- Fresh cilantro - for garnish

Steps
- Cut the avocado in half, remove the pit, and slice it into wedges.
- In a bowl, whisk together the egg and milk until well combined.
- In a separate bowl, mix the flour, salt, black pepper, and cayenne pepper.
- In another bowl, place the cornmeal and panko breadcrumbs together.
- Dip each avocado wedge first in the flour mixture, then in the egg mixture, and finally coat it in the cornmeal and panko mixture.
- Heat vegetable oil in a frying pan over medium heat until hot.
- Fry the coated avocado wedges for about 2-3 minutes on each side or until golden brown and crispy.
- Remove the avocado from the pan and place them on a paper towel to drain excess oil.
- Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
- Assemble the tacos by placing 2-3 crispy avocado wedges in each tortilla, topping with fresh salsa and garnishing with cilantro.
