Ingredients

  • Avocado - 1 large, ripe
  • Corn tortillas - 4 small
  • All-purpose flour - 50 grams
  • Cornmeal - 50 grams
  • Panko breadcrumbs - 50 grams
  • Egg - 1 large
  • Milk - 30 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Vegetable oil - for frying
  • Fresh cilantro - for garnish
  • Fresh salsa - for topping

Steps

  1. Cut the avocado in half, remove the pit, and slice it into wedges.
  2. In a bowl, whisk together the egg and milk until well combined.
  3. In a separate bowl, mix the flour, salt, black pepper, and cayenne pepper.
  4. In another bowl, place the cornmeal and panko breadcrumbs together.
  5. Dip each avocado wedge first in the flour mixture, then in the egg mixture, and finally coat it in the cornmeal and panko mixture.
  6. Heat vegetable oil in a frying pan over medium heat until hot.
  7. Fry the coated avocado wedges for about 2-3 minutes on each side or until golden brown and crispy.
  8. Remove the avocado from the pan and place them on a paper towel to drain excess oil.
  9. Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
  10. Assemble the tacos by placing 2-3 crispy avocado wedges in each tortilla, topping with fresh salsa and garnishing with cilantro.
