Ingredients
- Coconut milk - 400 ml
- Sugar - 60 g
- Cornstarch - 30 g
- Vanilla extract - 1 tsp
- Salt - a pinch
- Mixed fresh fruits (mango, strawberries, kiwi) - 200 g
- Chopped nuts (optional) - 30 g
Steps
- In a saucepan, combine coconut milk, sugar, cornstarch, vanilla extract, and a pinch of salt. Whisk until smooth.
- Place the saucepan over medium heat and continue to whisk constantly until the mixture thickens and starts to boil, about 10 minutes.
- Once thickened, remove from heat and let it cool for about 5 minutes.
- While the mixture cools, chop your choice of fresh fruits into bite-sized pieces.
- In serving bowls, layer the thickened coconut cream with the chopped fruits, alternating layers until the bowls are filled.
- If desired, sprinkle chopped nuts on top for extra texture.
- Chill in the refrigerator for at least 10 minutes before serving to enhance the flavors.
