Ingredients

  • Coconut milk - 400 ml
  • Sugar - 60 g
  • Cornstarch - 30 g
  • Vanilla extract - 1 tsp
  • Salt - a pinch
  • Mixed fresh fruits (mango, strawberries, kiwi) - 200 g
  • Chopped nuts (optional) - 30 g

Steps

  1. In a saucepan, combine coconut milk, sugar, cornstarch, vanilla extract, and a pinch of salt. Whisk until smooth.
  2. Place the saucepan over medium heat and continue to whisk constantly until the mixture thickens and starts to boil, about 10 minutes.
  3. Once thickened, remove from heat and let it cool for about 5 minutes.
  4. While the mixture cools, chop your choice of fresh fruits into bite-sized pieces.
  5. In serving bowls, layer the thickened coconut cream with the chopped fruits, alternating layers until the bowls are filled.
  6. If desired, sprinkle chopped nuts on top for extra texture.
  7. Chill in the refrigerator for at least 10 minutes before serving to enhance the flavors.
