Ingredients

  • Mango - 1/2 cup, diced
  • Strawberries - 1/2 cup, sliced
  • Kiwi - 1, peeled and diced
  • Pineapple - 1/2 cup, diced
  • Chopped nuts (optional) - 2 tbsp

Steps

  1. In a small saucepan, combine the coconut milk, agar-agar powder, maple syrup, and vanilla extract over medium heat.
  2. Stir the mixture continuously until it comes to a gentle boil, then reduce the heat and let it simmer for 5 minutes, stirring frequently.
  3. Remove the saucepan from heat and pour the mixture into two serving cups or bowls.
  4. Allow the coconut mixture to cool at room temperature for about 10 minutes, then refrigerate for at least 1 hour until set.
  5. Once the coconut base is set, top each serving with diced mango, sliced strawberries, diced kiwi, and pineapple.
  6. Sprinkle chopped nuts on top for added crunch, if desired. Serve chilled.
