Ingredients
- Beef ribs - 1 kg
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Lime juice - 60 ml
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
Steps
- In a large bowl, combine olive oil, minced garlic, lime juice, cumin, smoked paprika, oregano, chili powder, salt, and black pepper to create a marinade.
- Add the beef ribs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat the grill to medium-high heat.
- Remove the ribs from the marinade and place them on the grill. Cook for about 4-5 minutes on each side until a nice char develops.
- Reduce the heat to low, cover the grill, and continue cooking for an additional 1 hour, or until the ribs are tender and easily pull apart.
- Remove the ribs from the grill and let them rest for 10 minutes. Garnish with chopped cilantro before serving.
