Ingredients

  • Beef ribs - 1 kg
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Lime juice - 60 ml
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. In a large bowl, combine olive oil, minced garlic, lime juice, cumin, smoked paprika, oregano, chili powder, salt, and black pepper to create a marinade.
  2. Add the beef ribs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove the ribs from the marinade and place them on the grill. Cook for about 4-5 minutes on each side until a nice char develops.
  5. Reduce the heat to low, cover the grill, and continue cooking for an additional 1 hour, or until the ribs are tender and easily pull apart.
  6. Remove the ribs from the grill and let them rest for 10 minutes. Garnish with chopped cilantro before serving.
