Ingredients

  • Pork ribs - 600 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Lime juice - 2 tablespoons
  • Orange juice - 2 tablespoons
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large bowl, mix olive oil, minced garlic, lime juice, orange juice, cumin, smoked paprika, chili powder, salt, and black pepper to create a marinade.
  2. Add the pork ribs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat. Remove the ribs from the marinade and let any excess liquid drip off.
  4. Place the ribs on the grill and cook for about 20-25 minutes on each side, brushing occasionally with the marinade, until the ribs are cooked through and have a nice char.
  5. Once cooked, remove from the grill and let rest for 5 minutes before slicing.
  6. Serve with chopped fresh cilantro on top, and enjoy your healthy Costillas de Cerdo!
