- Coconut cream - 50 ml
- Almond milk - 50 ml
- Sugar - 50 grams
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Coconut flakes (unsweetened) - 20 grams
- Aquafaba (chickpea brine) - 30 ml
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F) and grease a small baking dish.
- In a mixing bowl, combine the all-purpose flour, baking powder, and salt.
- In another bowl, whisk together the coconut milk, coconut cream, almond milk, sugar, and vanilla extract until the sugar is dissolved.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- In a separate bowl, whip the aquafaba until it forms soft peaks, then gently fold it into the batter.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan.
- Once cooled, poke holes all over the surface of the cake using a fork.
- In a bowl, mix the remaining coconut milk, coconut cream, and almond milk. Pour this mixture evenly over the cake, allowing it to soak in.
