Ingredients

  • Jasmine rice - 100 grams
  • Coconut milk - 400 ml
  • Water - 200 ml
  • Maple syrup - 2 tablespoons
  • Cinnamon stick - 1
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Toasted coconut flakes - 2 tablespoons (for garnish)
  • Fresh mango - 100 grams (for garnish)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, maple syrup, cinnamon stick, and a pinch of salt.
  3. Bring the mixture to a gentle boil over medium heat, then reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
  4. Remove the saucepan from heat and stir in the vanilla extract. Let it sit covered for 5 minutes to thicken.
  5. Serve warm or chilled in bowls, garnished with toasted coconut flakes and fresh mango pieces.
