- Coconut flour - 1/2 cup
- Water - 1/4 cup
- Egg - 1 large
- Salt - 1/4 teaspoon
- Olive oil - 1 tablespoon (for frying)
- Shredded cheese (cheddar or mozzarella) - 1 cup
- Cooked chicken or vegetables (optional) - 1/2 cup
- Cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Fresh cilantro (for garnish) - optional
Steps
- In a mixing bowl, combine coconut flour, water, egg, and salt to create a smooth batter.
- Heat a non-stick skillet over medium heat and add a little olive oil.
- Pour half of the batter into the skillet, spreading it evenly to form a thin tortilla.
- Cook for about 2-3 minutes on one side until the edges start to lift, then flip and cook for another 1-2 minutes.
- Remove the tortilla and repeat the process with the remaining batter to make a second tortilla.
- Once both tortillas are cooked, place one back in the skillet and sprinkle half of the shredded cheese, cumin, and chili powder on top.
- If desired, add cooked chicken or vegetables over the cheese.
- Top with the second tortilla and cook for another 2-3 minutes until the cheese melts.
- Remove from the skillet, slice into wedges, and garnish with fresh cilantro if desired.
