Ingredients

  • Coconut flour - 1/2 cup
  • Water - 1/4 cup
  • Egg - 1 large
  • Salt - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for frying)
  • Shredded cheese (cheddar or mozzarella) - 1 cup
  • Cooked chicken or vegetables (optional) - 1/2 cup
  • Cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Fresh cilantro (for garnish) - optional

Steps

  1. In a mixing bowl, combine coconut flour, water, egg, and salt to create a smooth batter.
  2. Heat a non-stick skillet over medium heat and add a little olive oil.
  3. Pour half of the batter into the skillet, spreading it evenly to form a thin tortilla.
  4. Cook for about 2-3 minutes on one side until the edges start to lift, then flip and cook for another 1-2 minutes.
  5. Remove the tortilla and repeat the process with the remaining batter to make a second tortilla.
  6. Once both tortillas are cooked, place one back in the skillet and sprinkle half of the shredded cheese, cumin, and chili powder on top.
  7. If desired, add cooked chicken or vegetables over the cheese.
  8. Top with the second tortilla and cook for another 2-3 minutes until the cheese melts.
  9. Remove from the skillet, slice into wedges, and garnish with fresh cilantro if desired.
