Ingredients

  • Coconut milk - 200 ml
  • Evaporated milk - 100 ml
  • Eggs - 2 large
  • Honey - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Sweetened shredded coconut - 2 tablespoons
  • Sugar - 3 tablespoons
  • Water - 100 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a small saucepan, combine sugar and water over medium heat, stirring until the sugar dissolves. Allow it to boil until it turns a golden caramel color. Quickly pour the caramel into the bottom of two ramekins, swirling to coat the bottom evenly.
  3. In a mixing bowl, whisk together the eggs, coconut milk, evaporated milk, honey, and vanilla extract until well combined.
  4. Stir in the sweetened shredded coconut, ensuring it is evenly distributed.
  5. Pour the coconut mixture over the caramel in the ramekins.
  6. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  7. Bake in the preheated oven for about 30-35 minutes, or until the flans are set but still slightly jiggly in the center.
  8. Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours or until fully chilled.
  9. To serve, run a knife around the edge of the flan and invert onto a plate, allowing the caramel to flow over the top.
