- Coconut milk - 200 ml
- Evaporated milk - 100 ml
- Eggs - 2 large
- Honey - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Sweetened shredded coconut - 2 tablespoons
- Sugar - 3 tablespoons
- Water - 100 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a small saucepan, combine sugar and water over medium heat, stirring until the sugar dissolves. Allow it to boil until it turns a golden caramel color. Quickly pour the caramel into the bottom of two ramekins, swirling to coat the bottom evenly.
- In a mixing bowl, whisk together the eggs, coconut milk, evaporated milk, honey, and vanilla extract until well combined.
- Stir in the sweetened shredded coconut, ensuring it is evenly distributed.
- Pour the coconut mixture over the caramel in the ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for about 30-35 minutes, or until the flans are set but still slightly jiggly in the center.
- Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours or until fully chilled.
- To serve, run a knife around the edge of the flan and invert onto a plate, allowing the caramel to flow over the top.
