  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, diced
  • Potato - 1 medium, cubed
  • Green beans - 100 grams, trimmed and cut
  • Cabbage - 100 grams, chopped
  • Chickpeas - 1 can (400 grams), drained and rinsed
  • Vegetable broth - 500 ml
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1, juiced
  • Fresh cilantro - for garnish, chopped

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  2. Add the sliced carrot, diced zucchini, and cubed potato to the pot. Cook for about 5 minutes, stirring occasionally.
  3. Stir in the trimmed green beans and chopped cabbage, cooking for an additional 3 minutes.
  4. Add the drained chickpeas, vegetable broth, cumin powder, paprika, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the vegetables are tender.
  6. Once cooked, stir in the lime juice and adjust seasoning if necessary.
  7. Serve hot, garnished with chopped fresh cilantro.
