- Carrot - 1 medium, sliced
- Zucchini - 1 medium, diced
- Potato - 1 medium, cubed
- Green beans - 100 grams, trimmed and cut
- Cabbage - 100 grams, chopped
- Chickpeas - 1 can (400 grams), drained and rinsed
- Vegetable broth - 500 ml
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lime - 1, juiced
- Fresh cilantro - for garnish, chopped
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
- Add the sliced carrot, diced zucchini, and cubed potato to the pot. Cook for about 5 minutes, stirring occasionally.
- Stir in the trimmed green beans and chopped cabbage, cooking for an additional 3 minutes.
- Add the drained chickpeas, vegetable broth, cumin powder, paprika, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the vegetables are tender.
- Once cooked, stir in the lime juice and adjust seasoning if necessary.
- Serve hot, garnished with chopped fresh cilantro.
