- Carrots - 150 grams, diced
- Zucchini - 150 grams, diced
- Potato - 200 grams, diced
- Green beans - 100 grams, trimmed and cut into 2-inch pieces
- Corn kernels - 100 grams (fresh or frozen)
- Tomato - 1 medium, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the diced carrots, potatoes, and zucchini to the pot, stirring well to combine. Cook for another 5 minutes.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to a simmer and add the green beans, corn, chopped tomato, cumin, oregano, salt, and black pepper.
- Cover the pot and let the stew simmer for about 20 minutes, or until the vegetables are tender.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.
