  • Carrots - 150 grams, diced
  • Zucchini - 150 grams, diced
  • Potato - 200 grams, diced
  • Green beans - 100 grams, trimmed and cut into 2-inch pieces
  • Corn kernels - 100 grams (fresh or frozen)
  • Tomato - 1 medium, chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Add the diced carrots, potatoes, and zucchini to the pot, stirring well to combine. Cook for another 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to a simmer and add the green beans, corn, chopped tomato, cumin, oregano, salt, and black pepper.
  4. Cover the pot and let the stew simmer for about 20 minutes, or until the vegetables are tender.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.
