- Young green jackfruit - 400 grams (drained and rinsed)
- Annatto seeds - 2 tablespoons
- Garlic - 2 cloves (minced)
- Lime juice - 2 tablespoons
- Orange juice - 4 tablespoons
- Cumin powder - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Corn tortillas - 4 pieces
- Red onion - 1 small (sliced thin for garnish)
- Fresh cilantro - 2 tablespoons (chopped for garnish)
- Avocado - 1 medium (sliced for garnish)
Steps
- In a small pan, lightly toast the annatto seeds over medium heat until fragrant, about 2-3 minutes. Remove from heat and let cool.
- Blend the toasted annatto seeds with garlic, lime juice, orange juice, cumin, oregano, salt, and black pepper until smooth to create a marinade.
- In a large mixing bowl, shred the drained jackfruit into smaller pieces and pour the marinade over it. Mix well to ensure all pieces are coated. Let it marinate for at least 30 minutes.
- Heat olive oil in a large skillet over medium heat. Add the marinated jackfruit and cook for about 10-15 minutes, stirring occasionally, until the jackfruit is tender and caramelized.
- While the jackfruit is cooking, warm the corn tortillas in a separate pan or on a grill until pliable.
- Once the jackfruit is ready, serve it on the warm tortillas topped with sliced red onion, chopped cilantro, and avocado slices.
