Ingredients
- young green jackfruit - 400 grams (drained and rinsed)
- red onion - 1 medium (sliced)
- garlic - 3 cloves (minced)
- orange juice - 100 ml
- lime juice - 2 tablespoons
- achiote paste - 2 tablespoons
- cumin powder - 1 teaspoon
- oregano - 1 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- banana leaves - 2 large pieces (or aluminum foil as a substitute)
- fresh cilantro - for garnish
- tortillas - 4 small (for serving)
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the jackfruit with orange juice, lime juice, achiote paste, cumin, oregano, salt, and black pepper. Mix well to coat the jackfruit evenly.
- Add the sliced red onion and minced garlic to the jackfruit mixture, stirring to combine.
- Lay the banana leaves on a flat surface and place half of the jackfruit mixture in the center of each leaf. Fold the leaves over the mixture to create a packet, securing it with kitchen twine or toothpicks if necessary.
- Place the wrapped packets in a baking dish and cover with foil. Bake in the preheated oven for 1 hour.
- After 1 hour, remove the foil and bake for an additional 15-20 minutes to allow the edges to crisp slightly.
- Remove from the oven and let it rest for 10 minutes before unwrapping.
- Serve the Cochinita Pibil Vegana in warm tortillas, garnished with fresh cilantro.
