Ingredients

  • young green jackfruit - 400 grams (drained and rinsed)
  • red onion - 1 medium (sliced)
  • garlic - 3 cloves (minced)
  • orange juice - 100 ml
  • lime juice - 2 tablespoons
  • achiote paste - 2 tablespoons
  • cumin powder - 1 teaspoon
  • oregano - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • banana leaves - 2 large pieces (or aluminum foil as a substitute)
  • fresh cilantro - for garnish
  • tortillas - 4 small (for serving)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the jackfruit with orange juice, lime juice, achiote paste, cumin, oregano, salt, and black pepper. Mix well to coat the jackfruit evenly.
  3. Add the sliced red onion and minced garlic to the jackfruit mixture, stirring to combine.
  4. Lay the banana leaves on a flat surface and place half of the jackfruit mixture in the center of each leaf. Fold the leaves over the mixture to create a packet, securing it with kitchen twine or toothpicks if necessary.
  5. Place the wrapped packets in a baking dish and cover with foil. Bake in the preheated oven for 1 hour.
  6. After 1 hour, remove the foil and bake for an additional 15-20 minutes to allow the edges to crisp slightly.
  7. Remove from the oven and let it rest for 10 minutes before unwrapping.
  8. Serve the Cochinita Pibil Vegana in warm tortillas, garnished with fresh cilantro.
