Ingredients
- Pork shoulder - 400 grams
- Achiote paste - 30 grams
- Orange juice - 100 ml
- Lime juice - 30 ml
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Banana leaves - 2 large pieces (or aluminum foil)
- Corn tortillas - 4 pieces
- Red onion - 1 small, thinly sliced
- Fresh cilantro - 10 grams, chopped
- Avocado - 1 medium, sliced
Steps
- Preheat your oven to 150°C (300°F).
- In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper to create a marinade.
- Cut the pork shoulder into large chunks and coat them thoroughly with the marinade. Allow it to marinate for at least 1 hour, or overnight in the refrigerator for better flavor.
- Lay the banana leaves in a baking dish or use aluminum foil. Place the marinated pork in the center and wrap it tightly in the leaves, making sure it is sealed.
- Cover the dish with foil and bake in the preheated oven for about 3 hours, until the pork is tender and can be easily shredded.
- Once cooked, remove the pork from the oven and let it rest for 10 minutes. Shred the meat using two forks.
- Warm the corn tortillas on a skillet for about 30 seconds on each side until soft.
- Assemble the tacos by placing shredded pork in each tortilla and top with sliced red onion, fresh cilantro, and avocado slices.
