Ingredients
- Pork shoulder - 400 grams
- Achiote paste - 30 grams
- Orange juice (freshly squeezed) - 60 ml
- Lime juice - 15 ml
- Garlic cloves - 2, minced
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Eggs - 4 large
- Chopped cilantro - 2 tablespoons
- Avocado - 1 medium, sliced
Steps
- In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, cumin, salt, and black pepper to create a marinade.
- Cut the pork shoulder into large chunks and coat it thoroughly with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat the oven to 160°C (320°F). Place the marinated pork in a baking dish, cover it tightly with aluminum foil, and cook in the oven for 2 hours until tender.
- Once cooked, remove the pork from the oven and shred it with two forks.
- In a skillet, heat the olive oil over medium heat. Add the shredded pork and sauté for about 5 minutes until slightly crispy.
- In a separate bowl, whisk the eggs. Pour them into the skillet with the pork and scramble until fully cooked, about 3-4 minutes.
- Serve the Cochinita Pibil con Huevo hot, garnished with chopped cilantro and slices of avocado on the side.
