Ingredients

  • Pork shoulder - 400 grams
  • Achiote paste - 30 grams
  • Orange juice (freshly squeezed) - 60 ml
  • Lime juice - 15 ml
  • Garlic cloves - 2, minced
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Eggs - 4 large
  • Chopped cilantro - 2 tablespoons
  • Avocado - 1 medium, sliced

Steps

  1. In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, cumin, salt, and black pepper to create a marinade.
  2. Cut the pork shoulder into large chunks and coat it thoroughly with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the oven to 160°C (320°F). Place the marinated pork in a baking dish, cover it tightly with aluminum foil, and cook in the oven for 2 hours until tender.
  4. Once cooked, remove the pork from the oven and shred it with two forks.
  5. In a skillet, heat the olive oil over medium heat. Add the shredded pork and sauté for about 5 minutes until slightly crispy.
  6. In a separate bowl, whisk the eggs. Pour them into the skillet with the pork and scramble until fully cooked, about 3-4 minutes.
  7. Serve the Cochinita Pibil con Huevo hot, garnished with chopped cilantro and slices of avocado on the side.
