Ingredients

  • Pork shoulder - 400 grams
  • Achiote paste - 2 tablespoons
  • Orange juice - 100 milliliters
  • Lime juice - 30 milliliters
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Gluten-free burger buns - 2
  • Pickled red onions - 100 grams
  • Avocado - 1, sliced
  • Cilantro - a handful, chopped

Steps

  1. In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper to create a marinade.
  2. Cut the pork shoulder into chunks and add it to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the oven to 150°C (300°F). Place the marinated pork in a baking dish, cover it with foil, and cook for about 2 hours or until the pork is tender and easily shreds.
  4. Once cooked, remove the pork from the oven and let it rest for 10 minutes before shredding it with two forks.
  5. Toast the gluten-free burger buns lightly on a skillet or grill.
  6. Assemble the burgers by placing a generous amount of shredded cochinita pibil on the bottom half of each bun, topped with pickled red onions, avocado slices, and fresh cilantro.
  7. Cover with the top half of the bun and serve immediately.
