- Achiote paste - 2 tablespoons
- Orange juice - 100 milliliters
- Lime juice - 30 milliliters
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Gluten-free burger buns - 2
- Pickled red onions - 100 grams
- Avocado - 1, sliced
- Cilantro - a handful, chopped
Steps
- In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper to create a marinade.
- Cut the pork shoulder into chunks and add it to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat the oven to 150°C (300°F). Place the marinated pork in a baking dish, cover it with foil, and cook for about 2 hours or until the pork is tender and easily shreds.
- Once cooked, remove the pork from the oven and let it rest for 10 minutes before shredding it with two forks.
- Toast the gluten-free burger buns lightly on a skillet or grill.
- Assemble the burgers by placing a generous amount of shredded cochinita pibil on the bottom half of each bun, topped with pickled red onions, avocado slices, and fresh cilantro.
- Cover with the top half of the bun and serve immediately.
