Ingredients

  • Beef brisket - 400 grams
  • Orange juice - 120 ml
  • Lime juice - 30 ml
  • Garlic - 4 cloves, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Annatto paste - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, sliced
  • Pickled red onions - for serving
  • Fresh cilantro - for garnish
  • Corn tortillas - 4 pieces

Steps

  1. In a bowl, combine orange juice, lime juice, minced garlic, cumin, oregano, annatto paste, salt, and black pepper to create a marinade.
  2. Place the beef brisket in a large resealable bag and pour the marinade over it, ensuring the meat is well coated. Seal the bag and marinate in the refrigerator for at least 2 hours or overnight for better flavor.
  3. Preheat your oven to 150°C (300°F). Remove the brisket from the marinade and let excess marinade drip off. Reserve the marinade.
  4. In a large oven-proof pot, heat olive oil over medium-high heat. Sear the brisket on both sides until browned, about 4-5 minutes per side.
  5. Add the sliced onion to the pot and pour the reserved marinade over the brisket. Cover the pot with a lid and transfer to the preheated oven.
  6. Cook for about 2 hours or until the brisket is fork-tender. Check occasionally and add a bit of water if the liquid level gets low.
  7. Once cooked, remove the brisket from the pot and let it rest for 10 minutes. Shred the beef using two forks.
  8. Serve the shredded beef in warm corn tortillas, topped with pickled red onions and fresh cilantro.
