Ingredients

  • Shredded coconut - 150g
  • Fresh pineapple, finely chopped - 100g
  • Maple syrup - 60ml
  • Coconut milk - 50ml
  • Vanilla extract - 1 tsp
  • Pinch of salt - 1

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the shredded coconut, finely chopped pineapple, maple syrup, coconut milk, vanilla extract, and a pinch of salt.
  3. Mix until well combined and the mixture is sticky.
  4. Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake in the preheated oven for 20 minutes, or until the edges are golden brown.
  6. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
