- Shredded coconut - 150g
- Fresh pineapple, finely chopped - 100g
- Maple syrup - 60ml
- Coconut milk - 50ml
- Vanilla extract - 1 tsp
- Pinch of salt - 1
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the shredded coconut, finely chopped pineapple, maple syrup, coconut milk, vanilla extract, and a pinch of salt.
- Mix until well combined and the mixture is sticky.
- Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 20 minutes, or until the edges are golden brown.
- Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
