Ingredients

  • Fresh shredded coconut - 150 grams
  • Sweetened condensed milk - 100 grams
  • Granulated sugar - 30 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Egg white - 1 large

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the shredded coconut, sweetened condensed milk, granulated sugar, vanilla extract, and a pinch of salt.
  3. In a separate bowl, whisk the egg white until it is frothy but not stiff.
  4. Gently fold the frothy egg white into the coconut mixture until well combined.
  5. Using a spoon, scoop out small mounds of the mixture and place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake in the preheated oven for 15-20 minutes or until the tops are golden brown.
  7. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
