  • Coconut milk - 1 cup (240ml)
  • Water - 1 cup (240ml)
  • Maple syrup - 2 tablespoons (30ml)
  • Cinnamon powder - 1 teaspoon (2g)
  • Vanilla extract - 1/2 teaspoon (2.5ml)
  • Salt - 1/4 teaspoon (1.5g)
  • Ground cinnamon - for garnish

Steps

  1. In a medium saucepan, combine the Arborio rice, water, and salt. Bring to a boil over medium heat.
  2. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
  3. Add the coconut milk, maple syrup, cinnamon powder, and vanilla extract to the cooked rice. Stir well to combine.
  4. Increase the heat to medium and cook for an additional 5-10 minutes, stirring frequently until the mixture thickens to your desired consistency.
  5. Remove from heat and let it cool slightly before serving. Divide the pudding into two bowls and sprinkle with ground cinnamon for garnish.
