- Coconut milk - 1 cup (240ml)
- Water - 1 cup (240ml)
- Maple syrup - 2 tablespoons (30ml)
- Cinnamon powder - 1 teaspoon (2g)
- Vanilla extract - 1/2 teaspoon (2.5ml)
- Salt - 1/4 teaspoon (1.5g)
- Ground cinnamon - for garnish
Steps
- In a medium saucepan, combine the Arborio rice, water, and salt. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
- Add the coconut milk, maple syrup, cinnamon powder, and vanilla extract to the cooked rice. Stir well to combine.
- Increase the heat to medium and cook for an additional 5-10 minutes, stirring frequently until the mixture thickens to your desired consistency.
- Remove from heat and let it cool slightly before serving. Divide the pudding into two bowls and sprinkle with ground cinnamon for garnish.
