- Fresh cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Cherry tomatoes - 150g, halved
- Avocado - 1 small, diced
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Spiralize the zucchini using a spiralizer to create zoodles. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the zoodles to the skillet and cook for 3-4 minutes, stirring occasionally, until they are just tender but still slightly crisp.
- Remove the skillet from heat and stir in the lime juice, chopped cilantro, cherry tomatoes, and diced avocado.
- Season with salt, black pepper, and red pepper flakes (if using) to taste. Toss everything gently to combine.
