Ingredients

  • Zucchini - 2 medium-sized (about 400g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Cherry tomatoes - 150g, halved
  • Avocado - 1 small, diced
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the zoodles to the skillet and cook for 3-4 minutes, stirring occasionally, until they are just tender but still slightly crisp.
  4. Remove the skillet from heat and stir in the lime juice, chopped cilantro, cherry tomatoes, and diced avocado.
  5. Season with salt, black pepper, and red pepper flakes (if using) to taste. Toss everything gently to combine.
