Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Fresh cilantro - 30 grams, chopped
  • Fresh lime juice - 2 tablespoons
  • Zest of 1 lime
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, water, salt, and black pepper. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15 minutes or until the rice is cooked and the water is absorbed.
  4. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  5. Fluff the rice with a fork and then stir in the olive oil, lime juice, lime zest, and chopped cilantro until evenly combined.
  6. Serve warm as a delightful side dish.
