- Quinoa - 150 grams
- Water - 400 milliliters
- Fresh cilantro, chopped - 30 grams
- Lime juice - 30 milliliters
- Olive oil - 15 milliliters
- Garlic, minced - 1 clove
- Red bell pepper, diced - 50 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Rinse the quinoa under cold water to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
- While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add the minced garlic and diced red bell pepper, sautéing for about 3-4 minutes until the pepper is tender.
- Once the quinoa is cooked, fluff it with a fork and transfer it to the skillet with the sautéed vegetables.
- Add the chopped cilantro, lime juice, salt, and black pepper to the quinoa mixture. Stir well to combine all ingredients.
- Remove from heat and let it sit for a couple of minutes to allow the flavors to meld before serving.
