- Quinoa - 1 cup (200g)
- Water - 2 cups (500ml)
- Fresh cilantro - 1/2 cup, chopped (15g)
- Lime juice - 2 tablespoons (30ml)
- Olive oil - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Cherry tomatoes - 1/2 cup, halved (75g)
- Green onion - 2 stalks, chopped
Steps
- Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the water is absorbed.
- While the quinoa is cooking, prepare the dressing by whisking together lime juice, olive oil, minced garlic, salt, and black pepper in a small bowl.
- Once the quinoa is done, remove it from the heat and let it sit covered for 5 minutes. Then, fluff it with a fork.
- In a large bowl, combine the cooked quinoa, chopped cilantro, halved cherry tomatoes, and chopped green onion.
- Drizzle the lime dressing over the quinoa mixture and toss gently to combine.
- Serve warm or at room temperature as a refreshing side dish.
