Ingredients

  • Quinoa - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Fresh cilantro - 1/2 cup, chopped (15g)
  • Lime juice - 2 tablespoons (30ml)
  • Olive oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Cherry tomatoes - 1/2 cup, halved (75g)
  • Green onion - 2 stalks, chopped

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the water is absorbed.
  4. While the quinoa is cooking, prepare the dressing by whisking together lime juice, olive oil, minced garlic, salt, and black pepper in a small bowl.
  5. Once the quinoa is done, remove it from the heat and let it sit covered for 5 minutes. Then, fluff it with a fork.
  6. In a large bowl, combine the cooked quinoa, chopped cilantro, halved cherry tomatoes, and chopped green onion.
  7. Drizzle the lime dressing over the quinoa mixture and toss gently to combine.
  8. Serve warm or at room temperature as a refreshing side dish.
