- Zucchini - 2 medium
- Cilantro - 1/2 cup, chopped
- Lime - 1, juiced and zested
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Red pepper flakes - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 1 cup, halved
- Avocado - 1, diced
Steps
- Spiralize the zucchini using a spiralizer to create zucchini noodles and set aside.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic, cooking until fragrant (about 1 minute).
- Add the spiralized zucchini noodles to the skillet and sauté for 3-4 minutes until just tender.
- Stir in the lime juice, lime zest, chopped cilantro, red pepper flakes, salt, and black pepper. Mix well to combine.
- Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until the tomatoes are slightly softened.
- Remove from heat and gently fold in the diced avocado just before serving.
