Ingredients

  • Zucchini - 2 medium
  • Cilantro - 1/2 cup, chopped
  • Lime - 1, juiced and zested
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Red pepper flakes - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 1 cup, halved
  • Avocado - 1, diced

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, cooking until fragrant (about 1 minute).
  3. Add the spiralized zucchini noodles to the skillet and sauté for 3-4 minutes until just tender.
  4. Stir in the lime juice, lime zest, chopped cilantro, red pepper flakes, salt, and black pepper. Mix well to combine.
  5. Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until the tomatoes are slightly softened.
  6. Remove from heat and gently fold in the diced avocado just before serving.
