- Lime juice - 2 tablespoons (30ml)
- Fresh cilantro - 1/4 cup, chopped
- Salt - 1/2 teaspoon (2g)
- Black pepper - 1/4 teaspoon (1g)
Steps
- Remove the leaves and stem from the cauliflower, then cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains. Be careful not to over-process.
- Heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the riced cauliflower to the skillet and stir well to combine with the garlic. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Remove the skillet from heat and stir in lime juice, chopped cilantro, salt, and pepper. Mix well.
