Ingredients

  • water - 250 ml
  • all-purpose flour - 100 g
  • protein powder (preferably vanilla) - 30 g
  • sugar - 25 g
  • salt - 1/4 tsp
  • baking powder - 1/2 tsp
  • eggs - 1 large
  • cinnamon - 1 tsp
  • vegetable oil (for frying) - 500 ml
  • dark chocolate (70% cocoa) - 100 g
  • milk (or a milk alternative) - 100 ml
  • vanilla extract - 1 tsp

Steps

  1. In a medium saucepan, bring the water, sugar, and salt to a boil.
  2. Once boiling, remove from heat and stir in the flour, protein powder, and baking powder until a dough forms.
  3. Let the dough cool for about 5 minutes, then mix in the egg until fully incorporated.
  4. Transfer the dough to a piping bag fitted with a star tip.
  5. In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C.
  6. Pipe 10 cm long strips of dough into the hot oil, frying a few at a time until golden brown, about 2-3 minutes per side.
  7. Remove the churros from the oil and drain on paper towels, then roll them in cinnamon sugar (mix cinnamon and sugar together beforehand).
  8. For the chocolate sauce, melt the dark chocolate in a double boiler or microwave, then stir in the milk and vanilla extract until smooth.
  9. Serve the churros warm with the chocolate sauce for dipping.
