Ingredients

  • Chorizo - 250 grams
  • Corn tortillas - 4 small (about 6 inches)
  • Red onion - 50 grams, finely chopped
  • Fresh cilantro - 15 grams, chopped
  • Lime - 1, cut into wedges
  • Avocado - 1 medium, sliced
  • Sour cream - 60 ml
  • Salt - to taste
  • Olive oil - 1 tablespoon

Steps

  1. In a skillet over medium heat, add the olive oil and heat for 1 minute.
  2. Remove the casing from the chorizo and crumble it into the skillet.
  3. Cook the chorizo for about 8-10 minutes, stirring occasionally, until it is browned and fully cooked.
  4. While the chorizo cooks, warm the corn tortillas in a separate pan for about 30 seconds on each side or until pliable.
  5. Once the chorizo is done, remove it from heat and season with salt to taste.
  6. Assemble the tacos by placing a generous amount of chorizo on each tortilla.
  7. Top with chopped red onion, fresh cilantro, slices of avocado, and a dollop of sour cream.
  8. Serve with lime wedges on the side for squeezing over the tacos.
