Ingredients
- Chorizo - 250 grams
- Corn tortillas - 4 small (about 6 inches)
- Red onion - 50 grams, finely chopped
- Fresh cilantro - 15 grams, chopped
- Lime - 1, cut into wedges
- Avocado - 1 medium, sliced
- Sour cream - 60 ml
- Salt - to taste
- Olive oil - 1 tablespoon
Steps
- In a skillet over medium heat, add the olive oil and heat for 1 minute.
- Remove the casing from the chorizo and crumble it into the skillet.
- Cook the chorizo for about 8-10 minutes, stirring occasionally, until it is browned and fully cooked.
- While the chorizo cooks, warm the corn tortillas in a separate pan for about 30 seconds on each side or until pliable.
- Once the chorizo is done, remove it from heat and season with salt to taste.
