Ingredients

  • 2 large bell peppers (red or green) - halved and seeds removed
  • 200 grams chorizo sausage - casing removed and crumbled
  • 100 grams cauliflower rice
  • 50 grams shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a skillet, heat the olive oil over medium heat and add the crumbled chorizo. Cook for about 5-7 minutes until browned and crispy.
  3. Stir in the cauliflower rice, cumin, smoked paprika, salt, and pepper. Cook for an additional 3-5 minutes until the cauliflower is tender.
  4. Remove the skillet from heat and mix in half of the shredded cheese.
  5. Stuff each halved bell pepper with the chorizo and cauliflower mixture, pressing down gently to pack the filling.
  6. Place the stuffed peppers in a baking dish and top with the remaining shredded cheese.
  7. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  8. Remove from the oven and let cool for a few minutes before garnishing with fresh cilantro. Serve warm.
