Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese, shredded - 150 grams
  • Parmesan cheese, grated - 50 grams
  • Egg - 1 large
  • Chorizo sausage, crumbled - 150 grams
  • Red bell pepper, diced - 50 grams
  • Green onion, sliced - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Taco seasoning - 1 teaspoon
  • Sour cream - 2 tablespoons
  • Fresh cilantro, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (430°F).
  2. Rinse and roughly chop the cauliflower, then steam it until tender, about 5-7 minutes.
  3. Once cooked, drain the cauliflower well and let it cool slightly, then use a clean kitchen towel to squeeze out excess moisture.
  4. In a mixing bowl, combine the squeezed cauliflower, 100 grams of mozzarella cheese, Parmesan cheese, egg, salt, and pepper, mixing until well combined.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a pizza crust shape about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes until golden and firm.
  7. While the crust is baking, heat olive oil in a skillet over medium heat and add the crumbled chorizo, cooking until browned, about 5-7 minutes.
  8. Add the diced red bell pepper and taco seasoning to the skillet, cooking for an additional 2-3 minutes until the peppers are tender.
  9. Remove the crust from the oven and spread the chorizo mixture evenly on top.
  10. Sprinkle the remaining mozzarella cheese over the chorizo and return the pizza to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
  11. Once done, remove the pizza from the oven and let it cool slightly.
  12. Drizzle sour cream on top, garnish with sliced green onions and chopped cilantro before slicing and serving.
