Ingredients
- Cauliflower - 300 grams
- Mozzarella cheese, shredded - 150 grams
- Parmesan cheese, grated - 50 grams
- Egg - 1 large
- Chorizo sausage, crumbled - 150 grams
- Red bell pepper, diced - 50 grams
- Green onion, sliced - 2 tablespoons
- Olive oil - 1 tablespoon
- Taco seasoning - 1 teaspoon
- Sour cream - 2 tablespoons
- Fresh cilantro, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (430°F).
- Rinse and roughly chop the cauliflower, then steam it until tender, about 5-7 minutes.
- Once cooked, drain the cauliflower well and let it cool slightly, then use a clean kitchen towel to squeeze out excess moisture.
- In a mixing bowl, combine the squeezed cauliflower, 100 grams of mozzarella cheese, Parmesan cheese, egg, salt, and pepper, mixing until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a pizza crust shape about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes until golden and firm.
- While the crust is baking, heat olive oil in a skillet over medium heat and add the crumbled chorizo, cooking until browned, about 5-7 minutes.
- Add the diced red bell pepper and taco seasoning to the skillet, cooking for an additional 2-3 minutes until the peppers are tender.
- Remove the crust from the oven and spread the chorizo mixture evenly on top.
- Sprinkle the remaining mozzarella cheese over the chorizo and return the pizza to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
- Once done, remove the pizza from the oven and let it cool slightly.
- Drizzle sour cream on top, garnish with sliced green onions and chopped cilantro before slicing and serving.
