- Gluten-free burger buns - 2
- Mexican chorizo - 200 grams
- Monterey Jack cheese, shredded - 100 grams
- Avocado, sliced - 1 medium
- Tomato, sliced - 1 medium
- Red onion, thinly sliced - 1/4 medium
- Fresh cilantro, chopped - 2 tablespoons
- Lime juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat a skillet over medium heat and add the chorizo, breaking it apart with a spatula. Cook for about 8-10 minutes, or until fully cooked and browned.
- While the chorizo is cooking, slice the avocado, tomato, and red onion. Set aside.
- Once the chorizo is cooked, reduce the heat to low and sprinkle the shredded Monterey Jack cheese over it. Cover the skillet to melt the cheese for about 2-3 minutes.
- In a small bowl, mix the lime juice, olive oil, cilantro, salt, and black pepper to create a dressing.
- Toast the gluten-free burger buns in a separate skillet or oven until lightly golden.
- Assemble the burgers: Place a generous portion of the chorizo and melted cheese mixture on the bottom half of each bun. Top with avocado slices, tomato, and red onion. Drizzle the cilantro dressing over the toppings, then finish with the top half of the bun.
