Ingredients

  • All-purpose flour - 80 grams
  • Cocoa powder - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Maple syrup - 60 ml
  • Unsweetened applesauce - 60 ml
  • Almond milk - 120 ml
  • Vanilla extract - 1 teaspoon
  • Silken tofu - 150 grams
  • Agave syrup - 40 ml
  • Coconut milk - 60 ml
  • Lemon juice - 1 teaspoon
  • Coconut oil - 1 tablespoon (melted)

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small round cake pan.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, mix the maple syrup, applesauce, almond milk, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the chocolate batter into the prepared cake pan.
  6. In a blender, combine the silken tofu, agave syrup, coconut milk, and lemon juice, and blend until smooth and creamy.
  7. Gently pour the flan mixture over the chocolate batter in the cake pan.
  8. Place the cake pan inside a larger baking dish filled with hot water to create a water bath.
  9. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool for 10 minutes, then carefully invert onto a serving plate.
  11. Chill in the refrigerator for at least 2 hours before serving.
