- All-purpose flour - 80 grams
- Cocoa powder - 30 grams
- Baking powder - 1 teaspoon
- Salt - 1/4 teaspoon
- Maple syrup - 60 ml
- Unsweetened applesauce - 60 ml
- Almond milk - 120 ml
- Vanilla extract - 1 teaspoon
- Silken tofu - 150 grams
- Agave syrup - 40 ml
- Coconut milk - 60 ml
- Lemon juice - 1 teaspoon
- Coconut oil - 1 tablespoon (melted)
Steps
- Preheat the oven to 180°C (350°F) and grease a small round cake pan.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, mix the maple syrup, applesauce, almond milk, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the chocolate batter into the prepared cake pan.
- In a blender, combine the silken tofu, agave syrup, coconut milk, and lemon juice, and blend until smooth and creamy.
- Gently pour the flan mixture over the chocolate batter in the cake pan.
- Place the cake pan inside a larger baking dish filled with hot water to create a water bath.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool for 10 minutes, then carefully invert onto a serving plate.
- Chill in the refrigerator for at least 2 hours before serving.
