- Unsweetened cocoa powder - 30 grams
- Whole wheat flour - 50 grams
- Baking powder - 1 teaspoon
- Honey - 40 grams
- Eggs - 1 large
- Almond milk - 100 ml
- Vanilla extract - 1 teaspoon
- Cream cheese - 50 grams
- Coconut milk - 50 ml
- Eggs for flan - 1 large
- Sweetener of choice (e.g., stevia or maple syrup) - 20 grams
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine whole wheat flour, cocoa powder, baking powder, and a pinch of salt.
- In another bowl, whisk together honey, 1 egg, almond milk, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
- In a separate bowl, blend cream cheese, coconut milk, the remaining egg, and sweetener until creamy.
- Grease two small ramekins and pour the chocolate batter evenly into each.
- Carefully spoon the flan mixture on top of the chocolate batter in each ramekin.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven, let cool, and then refrigerate for at least 2 hours before serving.
