Ingredients

  • Unsweetened cocoa powder - 30 grams
  • Whole wheat flour - 50 grams
  • Baking powder - 1 teaspoon
  • Honey - 40 grams
  • Eggs - 1 large
  • Almond milk - 100 ml
  • Vanilla extract - 1 teaspoon
  • Cream cheese - 50 grams
  • Coconut milk - 50 ml
  • Eggs for flan - 1 large
  • Sweetener of choice (e.g., stevia or maple syrup) - 20 grams
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine whole wheat flour, cocoa powder, baking powder, and a pinch of salt.
  3. In another bowl, whisk together honey, 1 egg, almond milk, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
  5. In a separate bowl, blend cream cheese, coconut milk, the remaining egg, and sweetener until creamy.
  6. Grease two small ramekins and pour the chocolate batter evenly into each.
  7. Carefully spoon the flan mixture on top of the chocolate batter in each ramekin.
  8. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  9. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  10. Remove from the oven, let cool, and then refrigerate for at least 2 hours before serving.
