Ingredients

- Red onion - 1 small, diced (approximately 100g)
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon (5g)
- Smoked paprika - 1 teaspoon (5g)
- Chipotle powder - 1 teaspoon (5g)
- Diced tomatoes - 1 can (400g)
- Cilantro - 1/4 cup, chopped (15g)
- Lime juice - 1 tablespoon (15ml)
- Salt - to taste
- Black pepper - to taste
- Avocado - 1 medium, sliced (approximately 150g)
Steps
- Spiralize the zucchini using a spiralizer to create zoodles, then set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for about 3-4 minutes until softened.
- Add the minced garlic and sauté for another 1-2 minutes until fragrant.
- Stir in the ground cumin, smoked paprika, and chipotle powder, cooking for another minute to toast the spices.
- Pour in the diced tomatoes (with their juice) and bring to a simmer. Cook for about 5 minutes to allow the flavors to meld.
- Add the zoodles to the skillet and toss them in the sauce, cooking for an additional 3-4 minutes until they are slightly tender but still crisp.
- Remove from heat, then stir in the chopped cilantro and lime juice. Season with salt and black pepper to taste.
- Serve the Chipotle Zoodles hot, topped with sliced avocado.
