- Almond flour - 1 cup
- Mozzarella cheese (shredded) - 1 cup
- Cream cheese - 2 tbsp
- Egg - 1 large
- Chipotle peppers in adobo sauce - 2 tbsp, minced
- Ground cumin - 1 tsp
- Dried oregano - 1 tsp
- Salt - 1/2 tsp
- Olive oil - 1 tbsp
- Cooked chicken breast (shredded) - 150 g
- Mexican blend cheese (shredded) - 1 cup
- Sour cream - for topping
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 220°C (425°F).
- In a mixing bowl, combine almond flour, shredded mozzarella cheese, cream cheese, egg, minced chipotle peppers, ground cumin, dried oregano, and salt. Mix until a dough forms.
- Line a baking sheet with parchment paper and spread the dough into a circular shape, about 1/2 inch thick.
- Brush the crust with olive oil and bake in the preheated oven for 10-12 minutes, or until golden brown.
- Remove the crust from the oven and evenly distribute the shredded cooked chicken on top.
- Sprinkle the Mexican blend cheese over the chicken, and return to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
