Ingredients

  • Almond flour - 1 cup
  • Mozzarella cheese (shredded) - 1 cup
  • Cream cheese - 2 tbsp
  • Egg - 1 large
  • Chipotle peppers in adobo sauce - 2 tbsp, minced
  • Ground cumin - 1 tsp
  • Dried oregano - 1 tsp
  • Salt - 1/2 tsp
  • Olive oil - 1 tbsp
  • Cooked chicken breast (shredded) - 150 g
  • Mexican blend cheese (shredded) - 1 cup
  • Sour cream - for topping
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella cheese, cream cheese, egg, minced chipotle peppers, ground cumin, dried oregano, and salt. Mix until a dough forms.
  3. Line a baking sheet with parchment paper and spread the dough into a circular shape, about 1/2 inch thick.
  4. Brush the crust with olive oil and bake in the preheated oven for 10-12 minutes, or until golden brown.
  5. Remove the crust from the oven and evenly distribute the shredded cooked chicken on top.
  6. Sprinkle the Mexican blend cheese over the chicken, and return to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
