- 200g chicken breast - diced
- 1 tablespoon olive oil
- 1 small onion - chopped
- 2 cloves garlic - minced
- 1 bell pepper (red or green) - chopped
- 1 can (400g) diced tomatoes - drained
- 2 tablespoons chipotle in adobo sauce - minced
- 100g cream cheese - softened
- 100g shredded cheddar cheese
- 50g shredded mozzarella cheese
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 190°C (375°F).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened, about 3-4 minutes.
- Add diced chicken to the skillet, cooking until browned and cooked through, about 5-7 minutes.
- Stir in chopped bell pepper, drained diced tomatoes, chipotle in adobo sauce, cumin, paprika, salt, and black pepper. Cook for another 5 minutes until heated through.
- Reduce heat to low, and mix in the softened cream cheese until smooth and well combined.
- Transfer the mixture into a baking dish, spreading it evenly. Top with shredded cheddar and mozzarella cheese.
- Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool slightly before garnishing with fresh cilantro. Serve warm.
