Ingredients

  • 200g chicken breast - diced
  • 1 tablespoon olive oil
  • 1 small onion - chopped
  • 2 cloves garlic - minced
  • 1 bell pepper (red or green) - chopped
  • 1 can (400g) diced tomatoes - drained
  • 2 tablespoons chipotle in adobo sauce - minced
  • 100g cream cheese - softened
  • 100g shredded cheddar cheese
  • 50g shredded mozzarella cheese
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened, about 3-4 minutes.
  3. Add diced chicken to the skillet, cooking until browned and cooked through, about 5-7 minutes.
  4. Stir in chopped bell pepper, drained diced tomatoes, chipotle in adobo sauce, cumin, paprika, salt, and black pepper. Cook for another 5 minutes until heated through.
  5. Reduce heat to low, and mix in the softened cream cheese until smooth and well combined.
  6. Transfer the mixture into a baking dish, spreading it evenly. Top with shredded cheddar and mozzarella cheese.
  7. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven and let it cool slightly before garnishing with fresh cilantro. Serve warm.
