- Lime juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped

Steps
- Remove the leaves and stem from the cauliflower and cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice grains. Alternatively, you can grate the cauliflower using a box grater.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
