  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Green onions - 2, sliced (for garnish)

Steps

  1. Remove the leaves and stem from the cauliflower and cut it into florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice grains. Alternatively, you can grate the cauliflower using a box grater.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
