Ingredients

  • canned black beans - 400 grams, drained and rinsed
  • cooked quinoa - 100 grams
  • red onion - 50 grams, finely chopped
  • garlic - 2 cloves, minced
  • chipotle peppers in adobo sauce - 1 tablespoon, minced
  • cumin - 1 teaspoon
  • coriander - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/2 teaspoon
  • egg - 1 large
  • breadcrumbs - 50 grams
  • avocado - 1, sliced
  • whole wheat burger buns - 2
  • fresh cilantro - for garnish
  • lime - for serving

Steps

  1. In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, chopped red onion, minced garlic, minced chipotle peppers, cumin, coriander, salt, black pepper, and egg to the mashed beans. Mix until well combined.
  3. Gradually stir in the breadcrumbs until the mixture holds together. If it's too wet, add more breadcrumbs as needed.
  4. Divide the mixture into two equal patties. Refrigerate for about 10 minutes to help them firm up.
  5. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5 minutes on each side, or until golden brown and heated through.
  6. Toast the whole wheat burger buns lightly on the skillet or in a toaster.
  7. Assemble the burgers by placing the patty on the bun, topping with sliced avocado, fresh cilantro, and a squeeze of lime juice.
