- canned black beans - 400 grams, drained and rinsed
- cooked quinoa - 100 grams
- red onion - 50 grams, finely chopped
- garlic - 2 cloves, minced
- chipotle peppers in adobo sauce - 1 tablespoon, minced
- cumin - 1 teaspoon
- coriander - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/2 teaspoon
- egg - 1 large
- breadcrumbs - 50 grams
- avocado - 1, sliced
- whole wheat burger buns - 2
- fresh cilantro - for garnish
- lime - for serving
Steps
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, chopped red onion, minced garlic, minced chipotle peppers, cumin, coriander, salt, black pepper, and egg to the mashed beans. Mix until well combined.
- Gradually stir in the breadcrumbs until the mixture holds together. If it's too wet, add more breadcrumbs as needed.
- Divide the mixture into two equal patties. Refrigerate for about 10 minutes to help them firm up.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5 minutes on each side, or until golden brown and heated through.
- Toast the whole wheat burger buns lightly on the skillet or in a toaster.
- Assemble the burgers by placing the patty on the bun, topping with sliced avocado, fresh cilantro, and a squeeze of lime juice.
