- Corn tortillas - 4 pieces
- Grilled chicken breast - 200 grams
- Red onion - 1 small, thinly sliced
- Fresh cilantro - 30 grams, chopped
- Fresh parsley - 30 grams, chopped
- Garlic - 2 cloves, minced
- Red wine vinegar - 30 ml
- Olive oil - 60 ml
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime - 1, juiced
Steps
- Preheat a grill or grill pan over medium-high heat.
- Season the chicken breast with salt, black pepper, and a tablespoon of olive oil, then grill for 6-8 minutes on each side until fully cooked.
- While the chicken is grilling, prepare the chimichurri sauce by combining chopped cilantro, parsley, minced garlic, red wine vinegar, remaining olive oil, oregano, lime juice, salt, and pepper in a bowl. Mix well.
- Once the chicken is cooked, let it rest for a few minutes before slicing it into thin strips.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
