Ingredients

  • Corn tortillas - 4 pieces
  • Grilled chicken breast - 200 grams
  • Red onion - 1 small, thinly sliced
  • Fresh cilantro - 30 grams, chopped
  • Fresh parsley - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Red wine vinegar - 30 ml
  • Olive oil - 60 ml
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime - 1, juiced

Steps

  1. Preheat a grill or grill pan over medium-high heat.
  2. Season the chicken breast with salt, black pepper, and a tablespoon of olive oil, then grill for 6-8 minutes on each side until fully cooked.
  3. While the chicken is grilling, prepare the chimichurri sauce by combining chopped cilantro, parsley, minced garlic, red wine vinegar, remaining olive oil, oregano, lime juice, salt, and pepper in a bowl. Mix well.
  4. Once the chicken is cooked, let it rest for a few minutes before slicing it into thin strips.
  5. Warm the corn tortillas on the grill for about 30 seconds on each side.
  6. Assemble the tacos by placing sliced grilled chicken on each tortilla, topping them with chimichurri sauce and a few slices of red onion.
