Ingredients

  • Pizza dough - 200 grams
  • Olive oil - 1 tablespoon
  • Red bell pepper - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Zucchini - 1 small, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh arugula - 50 grams
  • Chimichurri sauce - 100 grams (homemade or store-bought)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness.
  3. Transfer the dough to a baking sheet lined with parchment paper.
  4. Brush the dough with olive oil and season with salt and black pepper.
  5. Spread half of the chimichurri sauce evenly over the pizza base.
  6. Arrange the sliced red bell pepper, red onion, zucchini, and cherry tomatoes on top of the sauce.
  7. Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  8. Remove the pizza from the oven and top with fresh arugula and the remaining chimichurri sauce.
  9. Slice and serve immediately.
