  • Tortillas (kosher) - 4 large
  • Shredded kosher cheese (cheddar or Monterey Jack) - 100 grams
  • Vegetable oil (for frying) - 1 cup
  • Sour cream (kosher) - for serving
  • Salsa (kosher) - for serving

Steps

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the ground beef, cumin, paprika, salt, and black pepper. Cook until the beef is browned and fully cooked, about 6-8 minutes. Remove from heat and stir in chopped cilantro.
  4. Lay out the tortillas on a flat surface. Spoon an equal amount of the beef mixture onto the center of each tortilla, then sprinkle with shredded cheese.
  5. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a chimichanga. Secure with toothpicks if necessary.
  6. In a deep skillet, heat vegetable oil over medium-high heat until hot. Carefully add the chimichangas, two at a time, and fry for about 3-4 minutes on each side until golden brown and crispy.
  7. Remove chimichangas from oil and drain on paper towels. Serve hot with sour cream and salsa on the side.
