- Tortillas (kosher) - 4 large
- Shredded kosher cheese (cheddar or Monterey Jack) - 100 grams
- Vegetable oil (for frying) - 1 cup
- Sour cream (kosher) - for serving
- Salsa (kosher) - for serving
Steps
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the ground beef, cumin, paprika, salt, and black pepper. Cook until the beef is browned and fully cooked, about 6-8 minutes. Remove from heat and stir in chopped cilantro.
- Lay out the tortillas on a flat surface. Spoon an equal amount of the beef mixture onto the center of each tortilla, then sprinkle with shredded cheese.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a chimichanga. Secure with toothpicks if necessary.
- In a deep skillet, heat vegetable oil over medium-high heat until hot. Carefully add the chimichangas, two at a time, and fry for about 3-4 minutes on each side until golden brown and crispy.
- Remove chimichangas from oil and drain on paper towels. Serve hot with sour cream and salsa on the side.
