- Lime juice - 2 tablespoons (30ml)
- Chili powder - 1 teaspoon (5g)
- Garlic powder - 1/2 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Fresh cilantro - 2 tablespoons, chopped (8g)
Steps
- Remove the leaves and stem from the cauliflower, then cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice grains. Be careful not to over-process.
- Heat the olive oil in a large skillet over medium heat.
- Add the riced cauliflower to the skillet and sauté for about 5 minutes, stirring occasionally until tender.
- Stir in the lime juice, chili powder, garlic powder, salt, and black pepper. Cook for an additional 2-3 minutes until well combined and heated through.
