Ingredients

  • Lime juice - 2 tablespoons (30ml)
  • Chili powder - 1 teaspoon (5g)
  • Garlic powder - 1/2 teaspoon (2g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Fresh cilantro - 2 tablespoons, chopped (8g)

Steps

  1. Remove the leaves and stem from the cauliflower, then cut it into florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice grains. Be careful not to over-process.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the riced cauliflower to the skillet and sauté for about 5 minutes, stirring occasionally until tender.
  5. Stir in the lime juice, chili powder, garlic powder, salt, and black pepper. Cook for an additional 2-3 minutes until well combined and heated through.
