Ingredients
- Pizza dough - 1 pre-made crust (approximately 30 cm)
- Bell peppers (any color) - 2 medium, halved and seeded
- Olive oil - 1 tablespoon
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Black beans - 1 cup, cooked and rinsed
- Corn kernels - 1/2 cup, fresh or frozen
- Cilantro - 1/4 cup, chopped
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Tomato sauce - 1/2 cup
- Nutritional yeast - 3 tablespoons
- Cashews - 1/2 cup, soaked in water for 2 hours
- Lemon juice - 2 tablespoons
- Water - 2-4 tablespoons (as needed for blending)
- Avocado - 1 small, sliced (for topping)
- Cherry tomatoes - 1/2 cup, halved (for topping)
Steps
- Preheat the oven to 220°C (425°F).
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
- Add black beans, corn, cilantro, cumin, chili powder, and salt to the skillet. Stir well and cook for another 5 minutes until heated through. Remove from heat.
- While the filling cools, prepare the cashew cheese. Drain the soaked cashews and blend them with lemon juice, nutritional yeast, and enough water to achieve a smooth consistency. Set aside.
- Spread the tomato sauce evenly over the pizza crust. Evenly distribute the bean and corn mixture over the sauce.
- Spoon dollops of cashew cheese over the pizza, then place the halved bell pepper halves on top, cut side up.
- Bake in the preheated oven for 20-25 minutes, until the crust is golden and the peppers are tender.
- Remove from the oven and let cool slightly. Top with avocado slices and cherry tomatoes before slicing and serving.
