Ingredients

  • Pizza dough - 1 pre-made crust (approximately 30 cm)
  • Bell peppers (any color) - 2 medium, halved and seeded
  • Olive oil - 1 tablespoon
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Black beans - 1 cup, cooked and rinsed
  • Corn kernels - 1/2 cup, fresh or frozen
  • Cilantro - 1/4 cup, chopped
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Tomato sauce - 1/2 cup
  • Nutritional yeast - 3 tablespoons
  • Cashews - 1/2 cup, soaked in water for 2 hours
  • Lemon juice - 2 tablespoons
  • Water - 2-4 tablespoons (as needed for blending)
  • Avocado - 1 small, sliced (for topping)
  • Cherry tomatoes - 1/2 cup, halved (for topping)

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  3. Add black beans, corn, cilantro, cumin, chili powder, and salt to the skillet. Stir well and cook for another 5 minutes until heated through. Remove from heat.
  4. While the filling cools, prepare the cashew cheese. Drain the soaked cashews and blend them with lemon juice, nutritional yeast, and enough water to achieve a smooth consistency. Set aside.
  5. Spread the tomato sauce evenly over the pizza crust. Evenly distribute the bean and corn mixture over the sauce.
  6. Spoon dollops of cashew cheese over the pizza, then place the halved bell pepper halves on top, cut side up.
  7. Bake in the preheated oven for 20-25 minutes, until the crust is golden and the peppers are tender.
  8. Remove from the oven and let cool slightly. Top with avocado slices and cherry tomatoes before slicing and serving.
