Ingredients
- 2 large poblano peppers
- 200 grams ground turkey
- 1 small onion - diced
- 2 cloves garlic - minced
- 1 medium tomato - diced
- 50 grams almonds - chopped
- 50 grams walnuts - soaked and blended
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup fresh parsley - chopped
- 1/2 cup pomegranate seeds
- 1/2 cup low-fat Greek yogurt
Steps
- Preheat the oven to 200°C (400°F).
- Roast the poblano peppers in the oven for about 15-20 minutes, turning occasionally until the skin is blistered and blackened. Remove and place in a plastic bag to steam for 10 minutes.
- In a skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent.
- Add ground turkey to the skillet, cooking until browned. Incorporate diced tomatoes, chopped almonds, cinnamon, nutmeg, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
- Remove the skin from the roasted poblanos, making a slit on one side to create pockets. Stuff each pepper with the turkey mixture.
- In a blender, combine soaked walnuts and Greek yogurt until smooth to create the nogada sauce. Adjust seasoning if necessary.
- Serve the stuffed peppers drizzled with nogada sauce, topped with pomegranate seeds and chopped parsley.
