- Jalapeño peppers - 4 pieces

- Garlic - 2 cloves, minced
- White vinegar - 100 ml
- Water - 100 ml
- Olive oil - 1 tablespoon
- Oregano - 1 teaspoon
- Bay leaf - 1 piece
- Salt - 1/2 teaspoon
Steps
- Wash the jalapeño peppers and slice them in half lengthwise, removing the seeds if desired.
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced carrots and red onion to the saucepan and sauté for another 5 minutes until they start to soften.
- Pour in the white vinegar and water, then add the jalapeño halves, oregano, bay leaf, and salt. Stir to combine.
- Bring the mixture to a simmer, then reduce the heat to low and let it cook for 15 minutes, allowing the flavors to meld.
- Remove from heat and let the mixture cool to room temperature before transferring it to a glass jar.
- Refrigerate for at least an hour before serving to enhance the flavors. Enjoy as a snack or as a topping for tacos, sandwiches, or salads.
