Ingredients

  • Jalapeño peppers - 4 pieces
  • Carrots - 1 medium, sliced
  • Red onion - 1/2 medium, sliced
  • Garlic - 2 cloves, minced
  • White vinegar - 100 ml
  • Water - 100 ml
  • Olive oil - 1 tablespoon
  • Oregano - 1 teaspoon
  • Bay leaf - 1 piece
  • Salt - 1/2 teaspoon

Steps

  1. Wash the jalapeño peppers and slice them in half lengthwise, removing the seeds if desired.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced carrots and red onion to the saucepan and sauté for another 5 minutes until they start to soften.
  4. Pour in the white vinegar and water, then add the jalapeño halves, oregano, bay leaf, and salt. Stir to combine.
  5. Bring the mixture to a simmer, then reduce the heat to low and let it cook for 15 minutes, allowing the flavors to meld.
  6. Remove from heat and let the mixture cool to room temperature before transferring it to a glass jar.
  7. Refrigerate for at least an hour before serving to enhance the flavors. Enjoy as a snack or as a topping for tacos, sandwiches, or salads.
