  • Dried chipotle peppers - 4 pieces

  • Garlic - 2 cloves, minced
  • Onion - 1/2 medium, chopped
  • Tomato - 1 medium, diced
  • Apple cider vinegar - 2 tablespoons
  • Brown sugar - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Oregano - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 1 cup

Steps

  1. Soak the dried chipotle peppers in hot water for 15 minutes to soften them, then drain and chop finely.
  2. In a medium saucepan, heat olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until the onion becomes translucent, about 4-5 minutes.
  3. Add the diced tomato to the saucepan and cook for another 3 minutes until the tomato softens.
  4. Stir in the chopped chipotles, apple cider vinegar, brown sugar, cumin, oregano, salt, and water. Bring the mixture to a simmer.
  5. Reduce heat to low and let the sauce simmer for about 10-15 minutes, stirring occasionally until it thickens slightly.
