- Tomato - 1 medium, diced
- Apple cider vinegar - 2 tablespoons
- Brown sugar - 1 teaspoon
- Cumin - 1/2 teaspoon
- Oregano - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Water - 1 cup
Steps
- Soak the dried chipotle peppers in hot water for 15 minutes to soften them, then drain and chop finely.
- In a medium saucepan, heat olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until the onion becomes translucent, about 4-5 minutes.
- Add the diced tomato to the saucepan and cook for another 3 minutes until the tomato softens.
- Stir in the chopped chipotles, apple cider vinegar, brown sugar, cumin, oregano, salt, and water. Bring the mixture to a simmer.
- Reduce heat to low and let the sauce simmer for about 10-15 minutes, stirring occasionally until it thickens slightly.
