Ingredients

  • Corn tortillas - 4 large

  • Green salsa (store-bought or homemade) - 1 cup
  • Black beans (canned, rinsed and drained) - 1 cup
  • Avocado - 1 ripe, sliced
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the corn tortillas into triangles to form chips.
  3. Spread the tortilla triangles on a baking sheet and lightly brush with olive oil. Bake for 10-12 minutes, or until crispy.
  4. In a large skillet over medium heat, combine the green salsa and black beans. Cook for about 5 minutes, stirring occasionally.
  5. Add the crispy tortilla chips to the skillet and gently toss to coat them in the salsa and bean mixture. Cook for an additional 2-3 minutes.
  6. Remove from heat and season with salt and pepper to taste.
