Ingredients

  • Corn tortillas - 4 large
  • Olive oil - 2 tablespoons
  • Salsa verde - 150 grams
  • Black beans - 100 grams, drained and rinsed
  • Red onion - 50 grams, thinly sliced
  • Bell pepper - 1 medium, diced
  • Corn kernels - 100 grams, fresh or frozen
  • Avocado - 1 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the corn tortillas into triangles and place them on a baking sheet.
  3. Drizzle the olive oil over the tortilla triangles and sprinkle with salt and pepper.
  4. Bake the tortilla chips in the preheated oven for about 10-12 minutes, or until crispy and lightly golden.
  5. In a bowl, mix the black beans, diced bell pepper, corn, and sliced red onion with half of the salsa verde.
  6. Once the tortilla chips are baked, remove them from the oven and spread the black bean mixture evenly over the chips.
  7. Pour the remaining salsa verde over the top and return to the oven for another 5-7 minutes.
  8. While the pizza is baking, prepare the avocado sauce by mashing the avocado in a bowl and mixing in lime juice, nutritional yeast, salt, and pepper.
  9. Remove the pizza from the oven and drizzle the avocado sauce over it.
  10. Garnish with chopped cilantro before serving.
