Ingredients
- Corn tortillas - 4 large
- Olive oil - 2 tablespoons
- Salsa verde - 150 grams
- Black beans - 100 grams, drained and rinsed
- Red onion - 50 grams, thinly sliced
- Bell pepper - 1 medium, diced
- Corn kernels - 100 grams, fresh or frozen
- Avocado - 1 medium, diced
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Nutritional yeast - 2 tablespoons
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Cut the corn tortillas into triangles and place them on a baking sheet.
- Drizzle the olive oil over the tortilla triangles and sprinkle with salt and pepper.
- Bake the tortilla chips in the preheated oven for about 10-12 minutes, or until crispy and lightly golden.
- In a bowl, mix the black beans, diced bell pepper, corn, and sliced red onion with half of the salsa verde.
- Once the tortilla chips are baked, remove them from the oven and spread the black bean mixture evenly over the chips.
- Pour the remaining salsa verde over the top and return to the oven for another 5-7 minutes.
- While the pizza is baking, prepare the avocado sauce by mashing the avocado in a bowl and mixing in lime juice, nutritional yeast, salt, and pepper.
- Remove the pizza from the oven and drizzle the avocado sauce over it.
- Garnish with chopped cilantro before serving.
