Ingredients

  • Corn tortillas - 4 medium-sized
  • Vegetable oil - 60 ml
  • Refried black beans - 200 g
  • Green salsa (store-bought or homemade) - 150 g
  • Cotija cheese (crumbled) - 50 g
  • Avocado - 1 medium, sliced
  • Red onion - 1/4, thinly sliced
  • Fresh cilantro - 2 tbsp, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste

Steps

  1. Cut the corn tortillas into triangular wedges and heat the vegetable oil in a large skillet over medium heat.
  2. Fry the tortilla wedges in batches until they are golden and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
  3. In the same skillet, warm the refried black beans over low heat until heated through, stirring occasionally.
  4. Add the green salsa to the skillet with the tortillas and gently toss to coat the chips evenly with salsa.
  5. Once the chips are coated, remove from heat and serve immediately on two plates.
