Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Olive oil - 1 tablespoon
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 small
  • Shredded lettuce - 1 cup
  • Diced tomatoes - 1 cup
  • Avocado - 1 medium, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, combine the drained chickpeas, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Mix well until the chickpeas are evenly coated.
  3. Spread the seasoned chickpeas on a baking sheet in a single layer and bake for 20 minutes, stirring halfway through, until they are crispy.
  4. While the chickpeas are baking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
  5. Once the chickpeas are done, remove them from the oven and let them cool slightly.
  6. Assemble the tacos by adding a layer of shredded lettuce, followed by the baked chickpeas, diced tomatoes, and slices of avocado.
  7. Garnish with fresh cilantro and serve with lime wedges on the side.
