- Canned chickpeas - 400 grams, drained and rinsed
- Olive oil - 1 tablespoon
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Onion powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 small
- Shredded lettuce - 1 cup
- Diced tomatoes - 1 cup
- Avocado - 1 medium, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, combine the drained chickpeas, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Mix well until the chickpeas are evenly coated.
- Spread the seasoned chickpeas on a baking sheet in a single layer and bake for 20 minutes, stirring halfway through, until they are crispy.
- While the chickpeas are baking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
- Once the chickpeas are done, remove them from the oven and let them cool slightly.
- Assemble the tacos by adding a layer of shredded lettuce, followed by the baked chickpeas, diced tomatoes, and slices of avocado.
- Garnish with fresh cilantro and serve with lime wedges on the side.
